Fresh Paccheri with Zucchini and Shrimp

Ingredients
- Fresh Paccheri: 80 g
- Shrimp: 40 g
- Zucchini: 40 g
- Tomato concassé: 15 g
- Fresh basil: 1 g
- Garlic: 2 g
- Extra virgin olive oil: 10 g
- Salt and black pepper to taste
Method
- Bring a large pot of salted water to a boil. Cook the paccheri until al dente. Reserve one cup of the cooking water before draining.
- Heat a frying pan, then add the olive oil. Add the diced zucchini and sauté for 1 minute.
- Add the garlic and, as soon as it begins to colour lightly, add the vegetable stock.
- Add the al dente paccheri and sauté for 1 minute. While stirring to emulsify the sauce, add the shrimp and tomato concassé. Finish with fresh basil on top and serve immediately.
Chef’s Note
For an even more aromatic result, add the fresh basil only at the very end of cooking. This preserves its natural fragrance and freshness, giving the dish its full summer character.
